Double Chocolate Chunk Oatmeal Cookies
1/2 cup Ghirardelli Unsweetened Cocoa Powder
2 cups quick cooking oats
1 1/2 cups whole wheat flour
1 tsp baking soda
1 tbs vanilla
1 tsp sea salt
1 cup Earth Balance Coconut Spread
1 cup Agave
1 1/4 cups Enjoy Life Mega Chocolate Chunks
1 flax "egg" (1tbs ground flax seed whisked with 3-5tbs water)
Preheat oven to 350. Whisk together dry ingredients. Add in coconut spread, agave, vanilla, chocolate, flax "egg". Combine until mixed well. Scoop 2 tbs of batter onto prepared cookie sheets a few inches apart.
Bake at 350 for 10-11 minutes
